Asparagus Tart For Mother's Day Brunch

Today we are sharing one of our go-to brunch recipes! It's a perfect meal to serve to mom in bed or for the whole family to enjoy. Only thing is you can't ask mom for help, it's her day off, remember?? But don't worry! This recipe is quick and easy but will trick everyone into thinking you're a full time chef!

Here is what you'll need:1 sheet of puff pastry defrosted2 tbsp grainy mustard1/2 cup  garlic and herb goat cheese1/2 cup mascarpone cheese1/2 cup pecorino cheese (plus a little more to garnish on top at the end)1 tsp lemon zest1 bunch of asparagus (trimmed)2 tbsp capersChopped dill to tasteSalt and pepper to tasteOlive oil Preheat oven to 400 degrees.In a small bowl, add all three cheeses, lemon zest, and salt and pepper and stir until combined.Unwrap puff pastry and place on parchment paper lined baking sheet. Fold edges in 1/2 inch creating a border.Spread mustard in the middle of the puff pastry out to the edges. Top with dollops of cheese mixture and spread as best you can (it doesn't have to be perfect, the heat from the oven will help spread it more).Quickly blanche asparagus in olive oil and salt and pepper in pan on stove just enough to soften them slightly.Transfer the blanched asparagus onto the tart and arrange the spears in a tight row. Sprinkle with the cappers, dill, and remaining pecorino and bake for 20-25 minutes or until the puff pastry is golden brown and crispy.Top with either poached eggs or arugula salad and enjoy!!
